When the weather gets colder, the best thing is the smell of freshly baked chocolate chip cookies. In this article, I’ll give you all the tips you need to make the best cookies and how you can customise the recipe to your liking.
What do you need for the best chocolate chip cookies?
You can use most of the ingredients as specified. It is important that you first mix the sugar with the butter, then add the eggs and finally stir in the dry ingredients. You can also use normal butter for this recipe, but browned butter gives the cookie a better flavour.
How is browned butter made?
Melt the butter in a saucepan over a medium heat. Swirl the pan every 20 seconds. If the butter has a stronger colour, has formed foam and has a slightly nutty smell, then it is good. This process can take 10 to 15 minutes.
Variations of chocolate chip cookies
- Triple chocolate: Use different types of chocolate for the chocolate chips (dark chocolate, milk chocolate and white chocolate).
- White chocolate and raspberries: Replace half of the chocolate chips with white chocolate and the other half with raspberries (frozen or fresh).

- 170 g unsalted butter
- 200 g brown sugar
- 50 g granulated sugar
- 1 egg & 1 egg yolk (room temperature)
- 1 tbsp vanilla extract
- 240 g flour
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 320 g chocolate chips
Instructions:
- Place the butter in a saucepan over a medium heat and allow to brown. Swirl the pan every 20 seconds. When the butter has a richer colour, has foamed and has a slightly nutty smell, it is ready. This process can take 10-15 minutes. Allow to cool slightly before proceeding to the next step.
- Put the brown sugar and granulated sugar into a bowl with the browned butter and mix with a hand mixer for 2 minutes. Add the eggs and vanilla extract and mix well.
- In another bowl, mix together the flour, baking powder and salt. Add the dry ingredients a little at a time, mixing well in between. When everything is mixed, add the chocolate chips.
- Leave to rest in the fridge for at least 30 minutes.
- When ready to bake, preheat the oven to 175°C top/bottom heat or 350°F. Shape the dough into 12 equally sized cookies. You can also prepare the cookie dough balls and freeze them so that you only have to take the dough out of the freezer next time.
- Bake the cookies for 11 minutes. When they are done, they should have a golden brown edge and the centre should still be soft. Allow the cookies to cool so they set properly.
